Red palm oil is a minimally processed palm oil that naturally contains high quantities of carotene, giving it its beautiful red colour. Carotene is where we get our Vitamin A, which is attributed to protecting against:

- Cataract
- Age-related muscular degeneration
- Free radicals that cause cell mutation and eventually cancer
- Low immunity1

Palm oil is the world’s richest natural plant source of carotene2, almost 30 times more than carrots3. This is why it is effectively being used to fight Vitamin A deficiency that causes blindness and fatal diseases among young children in Africa 4.

The only thing to remember is to avoid using it in fry-ups because this depletes the carotene content. Instead, use it in as seasoning or in baking5.

Try out this simple salad dressing.
1/4 cup red palm oil
1/4 cup white balsamic vinegar
1 crushed clove of garlic
1 tsp Dijon-style mustard
1 tsp honey
A squirt of lemon juice
grated rind of half lemon
a pinch of chilli flakes
